Homemade Kale Chips #Keto #Paleo

I soooo miss potato chips! On Keto you are very limited on crunchy foods.  No more potato chips yep not even sweet potato chips.  I have had to come up with pretty clever ways to satisfy that salty crunchy foods desire.  I recently made brussels sprouts chips which are still my favorite but they do take a lot of work to make.  Having to pull many sprouts apart is very time consuming.  So when I went to my local farmers market and they have large bags of organic kale on sale for a dollar I grabbed 2 bags and decided I would use 1 bag to make kale chips and the other bag I would use to make my family smoothies.

Making kale chips is super easy! You only need 2 ingredients and takes very little prep.  Soon enough you will be able to enjoy a nice healthy snack in no time!

Ingredients:

1 lb Bag Organic Kale

Olive Oil

Himalayan Pink Salt

First wash all the kale thoroughly.  Make sure after you wash the kale you allow it to dry.

Remove the stems or thick center pieces of each piece.  I wish I had originally done this  because some pieces were too thick and hard to chew.

Place the kale in a large mixing bowl and pour the olive oil on the kale and give it a nice toss so that every piece of kale is coated with the olive oil.

Give a nice coating of Himalayan Pink Salt and toss again.

Spread the kale out on a baking sheet and bake on 275 for 45 minutes.  For an extra crunch broil for 2-3 minutes.

Allow to cool and enjoy!

There are so many health benefits and so many delicious recipes using kale as the star ingredient!  Have you ever eaten kale? If so what is your favorite recipe?
