BLT Sandwich On A Egg Bun #Keto #Paleo

 

I was on the Paleo diet for a little over a year losing 40 pounds but then my body completely stalled. I wasn’t loosing or gaining weight.  After speaking with some of my friends who are doing the Keto diet I decided to make the switch in hopes to lose the last 40 pounds.  This marks the third week on the Keto diet.   It is similar to the Paleo diet but I find it a lot more strict so I have to be somewhat creative.  Normally I do not crave bread because I have not had it for so long but boy would it be nice to have a sandwich once in awhile! I got to thinking, why can I have that BLT sandwich? Sure I can!

 

Eggs can be so versatile.  I have had them so many ways the last few weeks; scrambled, hard boiled and then there is the egg “bread”.  I am not a big fan of eating eggs sunny side up like my son and daughter do but if I  cook it a bit longer so the yolk is not runny and use it as bread I can have that sandwich! I gave it a shot, glad I did. YUM!  

 

Ingredients

2 Eggs

2 Pieces of bacon (with no sugar)

2 Slices of tomato

1 Large piece of lettuce 

1 tbsp Coconut oil

 

 

 How to:

Use coconut oil in your pan so that the eggs do not stick in the pan. If you have cooked eggs sunny side up just cook  the eggs a bit firmer so that the yolk is solid.  If you have not cooked eggs sunny side up then just simply crack one egg at a time in your hot pan and cook until one side is firm. Once that is firm gently flip the egg over and cook until the yolk is not runny.  If you are cooking both eggs in the same pan make sure that you keep both eggs separated in the pan because each egg is your “bun”.  While my eggs are cooking I cook my bacon.  Yep I cook mine n the microwave but you can cook them stove top or in the oven.  Once the eggs “buns” are cooked gently remove them from the pan one at a time. Placing one on the bottom then adding lettuce, tomato and bacon then the second egg “bun” to the top of the sandwich. 

 

I cannot begin to tell you how delicious this sandwich is! It is messy to eat so make sure you have a napkin handy!  What ways do you eat sandwiches without the bread?

  2. I have to try this. Looks so filling and delicious. You can never go wrong with bacon! If we opt out of bread, we make lettuce wraps. πŸ™‚

  3. Wow, that sounds good! I am on keto too and have lost 14 lbs in 27 days. I really need to clean my keto up a little bit though and lose the dairy!
