Brussels Sprout “Chips” (Paleo / Keto / Low Carb)

 

I have been doing the Paleo (diet /  lifestyle) for a year now. There have been ups and downs.  Through it all it has been good for me health wise.  My up’s are not just the weight I have lost  but I have gone down several sizes in my clothing and I feel good. The downs are that I miss certain foods.  Sometimes I just want to eat something with a crunch, like chips.  So how can I have chips that are compliant? Using fresh veggies, that’s how!  Maybe your thinking it’s crazy to use something else other than potatoes to make chips but trust me it’s not when doing Paleo. I have learned to compromise. 

 

It is amazing the things you can come up with. Why do without? You do not have to, just do it the healthy way!  I came up with brussels sprouts chips.  Yep and they are sooooo good! At times I am baffled because I had never tried brussels sprouts before until a year ago.  I cannot believe how much I have been missing out! 

 

This recipe is super easy. Only three ingredients and easy to make! 

 

Ingredients:

1 package of fresh brussels sprouts

1 1/2 tablespoons of coconut oil

Himalayan salt

 

 

First and foremost wash the brussels sprouts with vegetable cleaner.  Next cut the ends of the spouts.  Then peel off each leaf (it is time consuming but so worth it, trust me!) and then place them in a large bowl.  Add the coconut oil to the brussels spout leaves.  Use a spoon and give them a good toss so that they are coated with the coconut oil. Season to taste with the Himalayan salt.  Finally on a silicon baking mat and baking pan bake at 375 for 45 minutes. For a added crunch place them on broil for 2 minutes. 

 

Eat them as a side dish or even as a snack. I know they are little “chips” but you can even eat them with guacamole! The possibilities are endless! I have lots of Paleo recipes to share so stay tuned but for now be sure to check out these few:
