I love chicken salad but living the Paleo lifestyle store bought mayonnaise is out of the question unless it has compliant ingredients. At a recent shopping trip I bought compliant mayonnaise that was $8.00 for a tiny jar which tasted disgusting and I wound up tossing it in the garbage can. It made me so upset to toss it but no one in my home liked it. It almost made us gag. I have not been brave enough to make it homemade either. My husband says it’s easy to make but honestly I am afraid of the taste (who knows maybe I will be sharing a homemade recipe here for mayonnaise if I am brave enough to make it). So for now how can I eat chicken salad? Typically I make it with mayonnaise, onions and celery but without mayonnaise it’s not much of chicken salad. So I decided to improvise. Glad I did!
Ingredients:
I Cup of chicken
1/8 of cup of red onion
1 Avocado
Salt and pepper
1/2 tsp lemon
1 Plum tomato
First remove the avocado (I use a spoon to scoop it out). With the back of a fork smash it all up. For the chicken I used leftover rotisserie chicken which I diced up but you can use a cooked chicken breast if you do not have leftovers. Next I diced up my onion and tomato. Then I added the chicken, tomato, and onion to the smashed up avocado and gave it a good mix. Finally I added my lemon juice, salt and pepper to it and gave it another good mix. Viola, it’s ready to eat! Yummy!
If you are on Paleo as well you can scoop some on cucumber slices or you can eat it plain like I did! The avocado makes it so nice and creamy that it melts in your mouth!

Avocado and chicken are two of my favourite things. This looks delish. Only thing I’d add extra is feta.
Ooh! Avocado would make a great substitute for mayonnaise. It makes everything yummy!

I am actually doing Paleo which is like Keto but I can have fruits and no sugar substitutes.
Avocado definitely is a must have in our household. We tend to have guacamole every other day, and it’s my favorite.
This is similar to how we make guacamole (just without the chicken). We are huge fans of all things avocado!

Yum! Two of my favorites are in this salad — chicken and avocado. I’ve never tried the paleo version. Will have to do so this week
