Ham, Cheese & Veggie Omelet Casserole

I purchased a spiral ham for our family to eat for Christmas dinner.  A whole ham can last awhile. We ate it for a few days with the leftover sides plus we also made ham sandwiches.  On day three it was time to make something different with the ham leftovers.  I needed easy, low carb and something that even my picky eaters would eat. 

Ingredients:

8 Eggs

1 Red Pepper (of whatever color pepper you prefer)

1 Whole Vidalia onion 

1 Cup of milk

Salt and Pepper

1 Cup of cheese

1 Cup of diced ham

Coconut oil

First dice the ham, onion and pepper into smaller pieces.  Crack eggs in a separate bowl, add the milk, salt and pepper and whisk all together.  Then add the peppers, onion, ham, salt and pepper to the bowl and whisk into the egg mixture.  Once whisked then add the cheese and whisk again.  Grease your pan with oil (I used coconut oil) so that your casserole does not stick.  Pour the mixture into the pan and bake on 350 degrees for 55 minutes. Allow to cool for about 5 minutes and enjoy!  I doubled the recipe which made two dishes and had enough for a few of us to eat for lunch the next day, yum!

  6. This reminds me of the old joke: “A definition of eternity: one ham and two people.” I’ll definitely try this since I’m always looking for new breakfast ideas. Most of the breakfast casserole recipes I’ve seen include sausage. I like sausage but let’s face it; it’s a mystery meat unless you’ve made it yourself. I’ve done that in the past and it was more work than it was worth.
