Ham and Egg Breakfast Taco’s

Some families like ours have nice big meals this time of the year.  We decided to go with ham this year because our kids like ham and we knew all of them would eat it with no complaints.  So I purchased a whole ham but after one meal there was enough leftovers for four more meals.  So instead of just re-heating the ham I decided to take the leftovers and make a whole new meal out of it. 

 

I made sandwiches on sweet rolls the next day for lunch but for dinner one night I made ham, egg and veggie breakfast taco’s.  A very simple recipe really and I did not have to go out and buy anything special, I used what we already had in the fridge.

Ingredients:

10 eggs (this fed 7 people)

1 yellow pepper

1 onion

2 cups of diced ham

1 teaspoon of coconut oil

salt and pepper

1 cup of shredded cheese

3/4 cup of milk

soft tacos

 

First I sauteed the peppers and onion in coconut oil. While these sauteed in a separate cooked I cracked open my 10 eggs and added my milk and whisked it together.  Once the peppers and onion was done sauteing I added the ham and cooked for a few more minutes. Next I added the egg mix and allowed it to cook for a few minutes on medium high and then added the ham.  While cooking I added the salt and pepper which I just eyeballed (I know how much my family likes their eggs seasoned).  When the eggs were cooked I added them into my soft taco’s and sprinkled shredded cheese to the tops.  For me I also added salsa but no one else liked this idea but it was good with it!
