Today is National Grilled Cheese Day! Grilled cheese sandwiches are a big hit in my home. My kids love them just as much as I did as a child and now as an adult! I try to look for new ways to make these sandwiches though. The traditional way is fine but it is also a great way to “hide” veggies so my kids do not know!
Ingredients used:
Any type of bread, we used Udi’s gluten free white bread
Mexican shredded cheese
1 handful of baby spinach
1 each Mini peppers (red, orange and yellow)
1 Diced onion
Butter
First I sauteed the onions and peppers. While the peppers where cooking I cooked the baby spinach by boiling them for 5 minutes, when they were done cooking I drained it really well so that my bread did not get soggy.
Next I spread butter on the bread placed and placed it in the pan to grill butter face down. On the un-buttered side of the bread I added cheese, sauteed peppers, baby spinach and onions.
Finally I added another layer of cheese on top of the spinach, then buttered another piece of bread, butter side facing up on top of the sandwich.
Cook until crispy and there you have a delicious and healthy grilled cheese sandwich!

Bacon goes with anything! LOL Bacon and tomato is another one of my favorite grilled cheese sandwiches too!
We love grilled cheese! My husband is a purist – only cheese, but I like to add other things. Spinach is delicious as well as caramelized onions and bacon 🙂
