My kids love to help me bake especially my littler ones. So I include them in the kitchen with me. This week my toddler helped me scoop, pour and mix a recipe we made for our co-op Thanksgiving party yesterday.
Chocolate Chip Pumpkin Bundt Cake
Chocolate Chip Pumpkin Bundt Cake With Powdered Sugar Topping
2014-11-21 08:10:04
Prep Time
15 min
Cook Time
1 hr
Ingredients
- For the Cake
- 2 1/2 Cups sugar
- 1 Cup of oil
- 3 Eggs
- 3 Cups of Flour
- 2 Tsp baking soda
- 1 Tsp Cinnamon
- 1 Tsp Nutmeg
- 1/2 Tsp Salt
- 1 (15 oz) Can of Pumpkin
- 1 1/2 Cups of Chocolate Chips
- For the topping
- 1/2 Cup of Sugar
Instructions
- Cake: In a large bowl add all of the cake ingredients except for the chocolate chips and then mix until thoroughly mixed. Once the ingredients are mixed add the chocolate chips and mix until they are blended into mixture. Bake for 1 hour on 350, test when done by poking with a toothpick to see if the mixture is firm.
Confectioners sugar topping
- It is so easy to make confectioners sugar, no need to buy it. Pour 1/2 scoop of regular sugar in a blender (I use the Vita Mix dry mixer) and blend on high until the sugar is turned into powder.
- When the cake is fully cooled and taken out of the cake pan sprinkle the confectioners sugar by sifting it over the top.
- Slice up and serve
