Our family enjoys potato skins as an appetizer when we seldom go out to eat. So I decided to come up with my own version of potato skins for us to enjoy at home which is more affordable for a large family!
Ingredients:
Olive oil
6 Baking potatoes
Shredded cheese
1 Onion diced
2 Slices of ham diced
Himalayan Crystal Salt
First clean potatoes really well. Then poke holes in them and bake them in the oven whole on 350 degrees for an hour. While the potatoes are baking dice onions and sauteed them.
After the potatoes are done being baked, cool so that you can cut them in 1/2 and then scoop out a portion of the inside (leaving this area for all the stuffing ingredients). You can save the portion you scooped out for other recipes such as mashed potatoes, etc. Take a bit of olive oil and using your hands coat the bottom of the potato. Then take the onions, ham and salt and mix together. Add all to the topping mixture of each 1/2 of the potato, drizzle top with shredded cheese and bake for about 10 minutes on 350 degrees.
