Pancakes, Pancakes! A Recipe Just For Kids! (Learn & Link With Linky)

I decided to start a series with my preschooler. An Eric Carle series. I have several of his books and what books I do not have I will check them out from the library. The series will include crafts or recipes that him and I will make together that coincide with what Eric Carle book we will be working on for that week.  

 

The first book we worked on is Pancake, Pancake!

My son and I didn’t just make your typical pancake, we make pancakes kids would love! 

Pancakes, Pancakes - A Recipe For Kids!

Ingredients
  1. 2 1/2 Cups All-Purpose Flour
  2. 1/2 Cup Coconut Oil
  3. 3 Tbsp. Baking Powder
  4. 2 Tbsp. Sugar
  5. 2 Eggs
  6. 1 1/2 Almond Milk
  7. 2 Tbsp. Chia Seeds
Yummy Toppings
  1. Strawberries, Blueberries, Chocolate Chips, Candy Sprinkles
Instructions
  1. This is a double batch because we have a large family, so if you do not want this many cut the recipe in half. In mixer or large bowl add the flour, egg, coconut oil, almond milk, Chia seeds and eggs mix together. Once fully mixed add batter to hot pan and start cooking (medium-high) as it's cooking add desired toppings. Then flip and allow other side to cook. We only added toppings to one side.
Notes
  1. Cooking Tip - Use a ice cream scooper to scoop the pancake batter into the pan.

 My son stood on a stool next to me preparing these special pancakes for him and his siblings to enjoy.  I allowed to a bit of distance away from the stove as they cooked while he added the yummy toppings.

  11. Eric Carle has always been a kids favorite at our house. I love that you made pancakes with the kids on this, love the sprinkle idea for bday breakfasts.

  15. I love pancakes…and books. My favorite Eric Carle book is the one about the Hungry Caterpillar. As for toppings on my pancakes…I’m a jelly or preserve gal!
