Chocolate Chip Pumpkin Bundt Cake With Powdered Sugar Topping

My kids love to help me bake especially my littler ones. So I include them in the kitchen with me. This week my toddler helped me scoop, pour and mix a recipe we made for our co-op Thanksgiving party yesterday.

  1. For the Cake
  2. 2 1/2 Cups sugar
  3. 1 Cup of oil
  4. 3 Eggs
  5. 3 Cups of Flour
  6. 2 Tsp baking soda
  7. 1 Tsp Cinnamon
  8. 1 Tsp Nutmeg
  9. 1/2 Tsp Salt
  10. 1 (15 oz) Can of Pumpkin
  11. 1 1/2 Cups of Chocolate Chips
  12. For the topping
  13. 1/2 Cup of Sugar
  1. Cake: In a large bowl add all of the cake ingredients except for the chocolate chips and then mix until thoroughly mixed. Once the ingredients are mixed add the chocolate chips and mix until they are blended into mixture. Bake for 1 hour on 350, test when done by poking with a toothpick to see if the mixture is firm.
Confectioners sugar topping
  1. It is so easy to make confectioners sugar, no need to buy it. Pour 1/2 scoop of regular sugar in a blender (I use the Vita Mix dry mixer) and blend on high until the sugar is turned into powder.
  2. When the cake is fully cooled and taken out of the cake pan sprinkle the confectioners sugar by sifting it over the top.
  3. Slice up and serve
Mama to 6 Blessings
Cooking/baking with his I think is a life lesson. So I teach them at an early age. Not only do my children enjoy helping but they are learning so many things. From measuring (math), vocabulary,  reading (if they are old enough to read), dexterity (perfect for younger ones who can scoop out the ingredients and then pour them. If you do not use a mixer they can hand mix as well).  Plus it’s great bonding time and when a child helps they get the reward by eating it too!

What about you, do you allow your children to help you cook or bake in the kitchen? If so what is their favorite recipe to help with?
