It’s been a heck of a week. My 4-year-old daughter was hospitalized due to her asthma and thankfully she was out in 4 days and is doing quite well since being home. While the boys went to soccer practice tonight I stayed home with her and we baked cookies for our Valentine’s Day party tomorrow with our friends. It was nice to have just her and I baking in the kitchen. We made Chocolate Cake Batter Cookies With Homemade Icing. So easy and yet so yummy!
This is such an easy recipe to make with children. Not a lot of ingredients, so they will not lose interest.
- I used a box of Pillsbury Chocolate Cake Mix
- 2 eggs
- 1/2 Cup of Vegetable Oil
- 1 Cup Powdered Sugar
- 5 Tablespoons of milk (I used unsweetened almond milk)
- 1/4 Cup of Sugar
- Take the cake mix, eggs, sugar and vegetable oil and mix all together then roll them into a 1 inch ball and bake at 350 degrees for 12 minutes. Once they are out of the oven gently press down on the tops with the back of a fork so that they are flattened. Allow to cool.
- Mix the powdered sugar and milk together using a fork, as you mix it will begin to thicken up, keep mixing until there are no more lumps.
- Do not ice the cookies until they are completely cooled off. I iced the cookies with a butter knife. The icing hardens quickly so if you are going to add candy accents be quick!

SO fun! My boys love to bake (and cook) with me. The best part is eating the goodies when they are all done.
