I am trying to good more vegetable dishes for my family especially being pregnant and trying to “watch” what I eat.
Here is a new recipe I found on Pinterest but I added my own spin on it:
Squash Casserole
Ingredients:
1 to 2 yellow squash (depending on how many people you are feeding)
1 to 2 zucchini squash (depending on how many people you are feeding)
2 cloves of garlic
1/2 Vadilla onion
1/2 teaspoon Rosemary
1/2 teaspoon Basil
1 1/2 cups of shredded cheese (you can also use a cheese substitute)
With our family of 6 I bought 2 of each squash but after cutting up one of each I decided it was enough and I am glad I did because there was just a very little bit left over and then I had fresh squash still to make this again in a few days or another dish using this squash.

Chop up the squash in 1/2 moon shapes (I kept the skin on the squash, so I bought my squash organic).
Then dice up the onion and garlic and mix the garlic, onion, Rosemary, Basil and squash together in a bowl with 1/2 of cheese and then pour into a baking pan and bake in the oven on 350 for 35 minutes or until the squash is tender.
My kids and husband even enjoyed it! I will definitely make it again!
