I admit it – I do not like to cook. I am not good at it, I get tired of making the same boring dinner meals and often nervous about making new things because I am afraid my family will not like it. Plus I like easy receipes because with 4 kids I do not have time for complicated receipes. I decided to step out of my comfort zone and start making new things.
I LOVE potato cheese soup, I found this receipe so I decided to make it. Glad I did, I do not want to toot my own horn but YUM! It was so good I wanted to share this receipe with you!

Ingredients
1/2 cup of butter
1/2 cup of flour
6 cups milk
4 large baking potatoes, baked peeled & cubed (I used organic potatoes)
4 green onions thinly sliced
12 strips of cooked bacon (crumbled)
2 cups ceddar cheese (I used loop cheddar cheese)
1 cup sour cream
3/4 teaspoon of salt
1/2 teaspoon of pepper
Directions:
1) Melt butter in a large sauce pan on low heat, stir in flour until no longer lumpy and bubbly. Cook for 2-3 minutes
2)Increase heat to medium and gradually stir in milk, cook until slightly thickened about 15 minutes
3) Add potatoes, onions – stirring occassionally until soup begins to bubble. Reduce heat, simmer for 10 minutes
4) Add remaining ingredients, stir cheese until melted – serve hot
Perfect for the up and coming cooler months to keep you nice and toasty warm!
