Think of bananas and you probably think of Chiquita® and the familiar blue label. For good reason. They are the first company to brand the banana back in 1944, when we introduced Miss Chiquita.When asked to name one brand of bananas, more consumers say Chiquita than any other brand.

Within 36 hours of harvest, Chiquita Bananas are packed in special shipping cartons and loaded onto refrigerated ships. Refrigeration “puts the bananas to sleep” and temporarily prevents them from ripening. They’re transported to market in refrigerated trucks. The whole process from the farm to your grocery store takes about two weeks. Chiquita is tops with consumers for taste, appearance, freshness, nutrition, value and size, too.

    2 cups whole wheat flour
    2 bananas (about 2/3 cup mashed)
    3/4 cup wheat germ
    2/3 cup orange juice
    1/3 cup maple syrup
    1/3 cup cooking oil
    2 teaspoons ground ginger
    1 teaspoon lemon zest
    1 teaspoon baking powder
    1 teaspoon baking soda

    Preheat oven to 375 degrees. Mash the bananas in medium bowl then add the maple syrup, orange juice, oil, ginger, and lemon zest. Mix well and set aside.
    Combine dry ingredients in a large mixing bowl. Make a well in the middle then pour in the liquid ingredients. Stir until ingredients are just mixed then spoon into muffin cups.
    Bake at 375 degrees for about 25 minutes.

    Banana Fritters
    serves 4

    1 1/2 cups flour
    1 tsp. baking powder
    1/4 tsp. baking soda
    1/4 tsp. salt
    3/4 cup water
    4 firm bananas
    5 cups vegetable oil (for frying)

    In a large bowl combine 1 cup of flour, baking powder, soda and salt. Gradually blend in the water and beat with whisk until smooth.

    Cut each banana crosswise into 3 pieces. You should have 12 pieces altogether. Coat bananas with remaining 1/2 cup of flour.

    Heat oil in a large skillet over high heat. Dip banana pieces in flour water mixture, coating well. Cook 4-6 pieces at a time until golden brown, about 3-5 minutes.

    Drain on paper towels.

  100. Banana Crumb Muffins

    * 1 1/2 cups all-purpose flour
    * 1 teaspoon baking soda
    * 1 teaspoon baking powder
    * 1/2 teaspoon salt
    * 3 bananas, mashed
    * 3/4 cup white sugar
    * 1 egg, lightly beaten
    * 1/3 cup butter, melted
    * 1/3 cup packed brown sugar
    * 2 tablespoons all-purpose flour
    * 1/8 teaspoon ground cinnamon
    * 1 tablespoon butter

    Directions

    1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
    2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
    3. In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
    4. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

  104. Banana ice cream:
    6 ripe bananas
    1 tbsp lemon juice
    3/4 c. light corn syrup
    1 vanilla bean, scraped
    1 1/2 c. heavy cream

    Freeze Bananas and then thaw for 45 minutes to 1 hour. Peel bananas and place in bowl of food processor w/lemon juice. Process for 10 to 15 seconds. Add corn syrup and vanilla bean seeds and turn processor on. Slowly pour in the heavy cream. Process until smooth. Chill mixture in refrigerator until it reaches 40 degrees. Put into an ice cream maker and mix according to however your ice cream maker works. Freeze for additional 3 to 6 hours (in airtight container) before serving. & ENJOY!!

    6 ounces dark chocolate, chopped, or semisweet chocolate chips
    2 tablespoons vegetable oil
    1/2 cup granola, chopped pecans and walnuts, or sprinkles

    1.Line a baking sheet with nonstick foil or parchment paper.

    2. Cut the bananas in half and insert a Popsicle stick into each half, as shown. Place them on the baking sheet and freeze for 15 minutes.

    3. Meanwhile, melt the chocolate with the oil in a Pyrex measuring cup in the microwave (check it every 30 seconds) or in a half-full pan of simmering water (about 2 minutes). Stir until smooth.

    4. Roll each banana half in the chocolate, then quickly sprinkle with your topping (if using).

    5. Freeze until the chocolate sets, 30 minutes. Serve or freeze in an airtight container for up to a week

    Banana Cream Supreme

    1 1/4 cups chopped graham cracker squares

    1/4 cup butter, melted

    3 tablespoons sugar

    1 cup sour cream

    1/2 cup cold milk

    1 package (3.4 ounces) vanilla instant pudding and pie filling

    1 container (12 ounces) frozen whipped topping, thawed

    3 medium bananas, sliced

    2 tablespoons pecans, grated

    Chop graham crackers; place in a bowl. Add butter and sugar; mix well. Press crumb mixture onto flat bottom of springform pan. In a classic batter bowl, whisk sour cream and milk until blended. Add pudding mix; whisk until pudding is dissolved. Add whipped topping, mixing until well blended.

    Spread half of filling over crust. Slice bananas; arrange over filling. Spread remaining filling over bananas. Grate pecans over top. Garnish as desired with fresh fruit/mint leaves.

    To serve, remove collar from pan; cut into 12 wedges.

    Yield: 12 servings

    (If I want to feed a “crowd” I double the recipe and put it in a 9 x 13 pan and then cut the pieces in squares to serve. Yummy)

    Banana Cream Supreme

    1 1/4 cups chopped graham cracker squares

    1/4 cup butter, melted

    3 tablespoons sugar

    1 cup sour cream

    1/2 cup cold milk

    1 package (3.4 ounces) vanilla instant pudding and pie filling

    1 container (12 ounces) frozen whipped topping, thawed

    3 medium bananas, sliced

    2 tablespoons pecans, grated

    Chop graham crackers; place in a bowl. Add butter and sugar; mix well. Press crumb mixture onto flat bottom of springform pan. In a classic batter bowl, whisk sour cream and milk until blended. Add pudding mix; whisk until pudding is dissolved. Add whipped topping, mixing until well blended.

  198. Chocolate Chip Walnut Banana Bread

    1 1/4 cups all-purpose flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    2 large eggs
    1/2 teaspoon of vanilla extract
    1/2 cup unsalted butter
    1 butter to prepare the pan
    1 cup sugar
    3 mashed bananas
    1 cup chopped walnuts
    1 cup semi-sweet chocolate chips

    Sift the dry ingredients into a medium bowl. Whisk the eggs and vanilla together, in a seperate bowl. Lightly brush a 9 by 5 by 3-inch loaf pan with butter. Preheat the oven to 350 degrees F.

    Cream the butter and sugar together and gradually pour the egg mixture into the butter while mixing well. Add the bananas to the mix and mix well.

    Mix in the flour mixture with a rubber spatula and then fold in the nuts and chocolate chips and transfer the batter to the prepared pan. Bake for 55 minutes or until a toothpick inserted into the center of the bread comes out clean. Cool for about 5 minutes. Turn the bread out of the pan and let cool completely on the rack. Wrap in plastic wrap. The banana bread is best if served the next day.
