Rainbow Pancakes

Last week my 4 year old daughter woke up before her siblings did. This is rare because normally a few of my kids seem to wake up at the same time so I  wanted to take advantage of this time with just her and I. Mommy and daughter time.  She loves to help in the kitchen and since she had not eaten breakfast I asked her if she wanted to help me make pancakes. Her eyes got real big as she answered yes. We made our way into the kitchen were I pulled down my bulk box of Bisquick mix (yes sometimes I do not make pancakes from scratch, I know I know not everything can be homemade for busy moms).  I poured the ingredients in the measuring cups were she jumped at the chance to pour them in the mixing bowl. 

 

 

Many times I add chia seeds or chocolate chips in their pancakes but this time I decided to have her toss in something that would make the pancakes look in rainbow pancakes. Rainbow pancakes for St. Patrick’s Day! 

 

Ingredients

You can make your pancakes homemade using my recipe (minus the cinnamon and apples) or you can use box mix

Rainbow sprinkles

 

Simple and easy enough to make! When your pancake mix is completed toss in rainbow sprinkles  (I just let her go to town, I did not measure) and mix for a few moments so that the sprinkles will be throughout the mix. I use a Kitchen-Aid which works great in all our backing, definitely a must to have in the kitchen.  Once the sprinkles are  mixed in then cook up your pancakes.

I cooked them a few moments on one side and then flipped them over and cooked a few moments on the other side.  Make sure you do not overcook them or else you will be see the rainbow’s in them.  The sprinkles give it more of a pastel rainbow swirl which my daughter was thrilled about! 

When they were done my daughter ate about 4 of them! The rainbow pancakes were a hit!  What fun rainbow foods do  you make for your kids?

  9. Those are so cute! I’ve never added chia seeds to pancakes. It sounds like a great way to add fiber though. Does it change the taste or texture?

  12. My kids love to have pancakes for breakfast. They love sprinkles. I never thought about adding them in. Great idea. I just bought a waffle iron, so I will try to make sprinkle rainbow waffles as well.
