Crock-Pot Lentil & Ham Soup

 

Our schedule has gotten busy so I decided to have my crock-pot do the cooking for me! The great thing about using crock-pots is that not only do they do the cooking for you but you can put practically anything in them especially soups and they come out great! One of my favorite recipes is lentil soup so every time I make it I change it up a bit. This is my new creation.

Crock-Pot Lentil & Ham Soup

Ingredients
  1. 4 containers of 32 oz. of chicken broth (you could us vegetable stock if you did not want to use chicken broth)
  2. 14 oz. bag of diced onions and peppers
  3. 4 large carrots diced
  4. 2 12 oz. bags of lentils
  5. Left over ham (I used about 2 cups cut into small pieces)
  6. Salt & Pepper
  7. 2 Cloves if minced garlic
  8. 1 Cup of water
Instructions
  1. Rinse the lentils. Pour in the broth and water in the crock-pot along with the vegetables and lentils. Stir everything in the crock-pot. Make sure the lentils are covered in the broth. Allow to cook on high for 4 hours. After the 4 hours then add the ham and cook for 2 more hours on high.
Notes
  1. I tend to cook this particular soup a bit longer because I like it thick but you could cook less so that it would be of a thinner viscosity.
  2. You can add any vegetables you prefer it doesn't necessarily have to be peppers and onions. In the past I have used carrots, celery, potato, onions, squash and even rice.

 This recipe can be modified to a total vegan dish. Simply use vegetable stop and do not use ham.  What soups have you made in your crock-pot lately?
