Homemade Low Carb (Paleo) Blueberry Muffins #NationalBlueberryMuffinDay

 

If you are a regular reader here I am sure you have probably read about how my family has transitioned into clean eating. Clean eating is eating foods that are not processed foods, sugary foods, dye free foods, etc. Basically we are eating meats, fruits and vegetables. That being said I do bake homemade breads, muffins, cookies and other treats for my kids but using healthy ingredients instead of white flours and processed sugar. 

 

Today (July 11th) is National Blueberry Muffin Day so I decided to make my kids homemade blueberry muffins.  Before I share my delicious recipe with you on how to make low carb (Paleo compliant) muffins with you I want tell you a few health benefits on blueberries: 

 

Blueberries are loaded with vitamins such as vitamin C, vitamin K and B6.  

 

They are one of the fruits that have lower carbohydrates and calories but they are one still filled with the highest amount of nutrients. 

 

Blueberries are said to have one of the highest antioxidant levels of all common fruits and vegetables.  

 

It is said that blueberries can neutralize some of the free radicals that damage your DNA.

 

The antioxidants in blueberries are linked to reduced levels of oxidized LDL which makes blueberries very good for your heart. A daily 2-ounce serving of blueberries lowered LDL oxidation by 27% over eight weeks in obese people who were obese.

 

All these great benefits, can you see why a day has been dedicated to blueberries? Yum, right?

Ingredients

2 cups of almond flour

1/2 tsp baking soda

1/8 tsp sea salt

3 eggs

1/4 cup honey

1 tbsp melted coconut oil

1 tbsp lemon juice

1 tsp pure vanilla (not imitation)

1 cup of fresh blueberries

cupcake liners

 

First and always make sure you wash your fruit before eating.  I pour the blueberries in a colander and spray them with veggie/fruit wash and then give them a good rinse.

 

I am what you call a no fuss baker. I hardly ever separate ingredients so basically I put the wet and dry ingredients altogether in my mixing bowl: almond flour, vanilla, eggs, salt, lemon juice, honey, baking soda and coconut oil and.

 

I turn my mixer on medium and give it a good mix and then slowly add in the blueberries. The one thing I did not want was for all the blueberries to burst open in my mix so make sure that the batter and blueberries mix together slowly.

 

Next I added my muffin liners in my muffin tin pans. Once the batter was mixed together I used an ice cream scoop and filled my muffin cups almost to the top. Do not overfill the liners because they will run over. 

 

Finally bake on 325 degrees for 35 minutes.  They will come out nice and fluffy and moist!  What blueberry recipes have you made lately?
