Keto Fall Iced Coffee

There are certain things I can handle not having on Keto.  For instance, I gave up ketchup which took me a long time to get used to.  I used to put ketchup on practically on all my meat and eggs but I realized it was not worth having the sugar and calories so I stopped cold turkey.  Now I do not miss it a bit. One thing I cannot stop cold turkey is my iced coffee. I have tried but I am addicted!  How can I have it though and stick with Keto and have it still taste yummy?  After trying several different ways to make it I finally found a way that does not leave an aftertaste and I do not have to drink it straight black which I tried – gross!   Not only is it my favorite way to drink coffee but its festive for this time of the year! With flavors such as apple, cinnamon or pumpkin! 

 

We have a Kureg coffee maker but I stopped using it a few years ago when the water collection area got yucky.  I know I can rinse vinegar through it but it creeps me out that maybe I cannot get the vinegar out and my coffee will taste like vinegar. No thank you! So one day my husband brought home a coffee maker. Honestly, I thought he was crazy.  I felt like I was stepping back in time.  Thankfully he bought it because it is my favorite kitchen appliance in our home! I can make a pot of coffee which will last me for a few days! 

 

So how do I make this yummy Keto Fall festive iced coffee? It’s super easy! 

8 scoops of coffee (I use decaf because I am still nursing my baby)

10 cups of water

1 tbsp of ONE of the following spices: Pumpkin Spice, Apple Pie Spice or Cinnamon

1 tsp Monk Fruit Sugar

2 tbsp half and half

 

I followed the directions for my coffee maker. Since I wanted a whole pot of coffee I used 8 scoops of coffee and 10 cups of water.  Before I started the coffee I added a tsp. of one of the spices to the coffee grounds.  When the coffee was done I allowed the coffee to cool.  For my coffee, I use 1 tbsp of Monk Fruit Sugar which is totally Keto compliant.  So I put my 1 tbsp of Monk Fruit Sugar in my glass, then my coffee and 2 tbsp of half and half.  Finally, I add several ice cubes to it.  Gave it a good stir and voila! Easy, huh?

 

When Christmas comes around I will experiment with new spices and try to make winter/Christmas flavors!  This recipe is so good!  What can you not give up on Keto?  How do you like your coffee?
