Yesterday my church was having a Mother’s Day bake sale, all the proceeds were going to the youth church camping trip. I strolled around the tables drooling at all the delicious goodies but I knew none of these treats were on my Paleo diet so I stepped away. I could not stop thinking about it so I walked over to the tables again and saw lots of chocolate chip cookies. One that particularly caught my eye were the chocolate chip cookie cakes but unfortunately they were all gone.
Church ended we went home, we had lunch but I could not stop thinking about those cookies! UGH! I guess my husband got tired of listening to me because he decided to make me a chocolate chip cookie treat.
Ingredients:
2 sticks of I butter
2 1/4 cups of flour
1 tsp. baking soda
1 tsp. salt 3/4 cups of sugar
3/4 cups packed brown sugar
1 tsp. vanilla
2 large eggs
1 bag of mini chocolate chips
1/2 a bag of white chocolate chips
I am all about just dumping all the ingredients in my Kitchen-Aid so that is what we did. We mixed the brown sugar, butter, flour, vanilla, eggs, sugar and baking soda together until completely blended. Then add the chocolate chips to the mix. Using a glass grease coated glass pan pout the batter in the pan. Smooth the top using a spatula. Finally bake at 325 for 15 minutes. If they come out too gooey then back for 5-7 minutes longer.
I personally love them almost like the consistency of raw cookie dough in the center. Yum! My husband made two pans of these ooey gooey chocolate chip cookie bars and by the next morning there was only a 1/4 of one pan left! Yikes! I know what you are thinking, I did not eat it all by myself. There are 8 of us. Time to get back on Paelo!
Did you know that May 15th is National Chocolate Chip Cookie Day? It all started in 1937, Ruth Graves Wakefield of Whitman Massachusetts was curious what would happen if she added chocolate to her cookies. While working at the Toll House Inn, she added cut-up chunks of semi-sweet Nestle chocolate bar to a cookie recipe. The cookies were a huge success and in 1939 Wakefield signed an agreement with Nestle to add her recipe to the chocolate bar’s packaging. Who would have thought chocolate chips would have been such a hit!
