Crockpot Potato Cheese Soup

I LOVE soup. I can could eat it every night for dinner if I could. I find myself making more soups for my family if I use my crock pot. Dump it all in and leave it to cook is my motto! This busy mama to 5 kids, soon 6 needs easy recipes to make so this method is right up my alley! One of my latest recipes is Crockpot Potato Cheese Soup! Looking for easy? Ingredients
  1. 8 Small Red Potatoes
  2. Leftover Ham (From a Whole Ham, Approximately 2 Cups Diced)
  3. 1 Medium Onion
  4. 3 Carrots Diced
  5. 1 Cup Corn
  6. 3 (14.5 oz) Low Sodium Chicken Stock
  7. 1 Cup Half And Half
  8. Salt & Pepper To Taste
  9. Shredded Cheddar Cheese
Instructions
  1. After cleaning all the vegetables and dicing them add to the crockpot and add all the liquids. Cook on low for 7 hours. After pouring portion into individual bowl add shredded cheese (serving size preference) to the top of the soup.

Basically I threw in what I already had available in my refrigerator! The great thing about this recipe is that it can be modified to what is in your fridge too, add in or leave out! 

 

This soup is perfect on a cold winter’s day or days like we have had lately here in Florida where it rains and rains for days and we are cooped up in the house. It’s comfort food!

    • Scott, I really did not measure the cheese. It was more of a small handful that I drizzled over the top of the individual bowl of soup servings.

  24. This sounds great. I can imagine it would also be good with bacon if you don’t ham on hand, but ham would be less expensive too. Either way it sounds delicious and we will be trying it soon.
