Breakfast does not have to be boring. I enjoy cooking for my family but I am all about easy and not a lot of steps in the process. My kids enjoy the traditional pancakes, french toast and waffles but how can things be changed up a bit? I took french toast and changed it into a casserole dish. I found the recipe on-line that I altered. It was just as easy in making regular french toast!
- 7 eggs
- 1 loaf of Italian bread cut into small cubes
- 2 cups almond milk
- 2 tbsp pure vanilla
- 1 stick of butter melted
- coconut oil
- 1 tsp cinnamon
- 1 cup brown sugar
- Melt butter and then add the brown sugar and mix so there are no lumps. Coat the pan with coconut oil to prevent the casserole sticking. Cut the Italian bread into small cube pieces and place in the pan and drizzle the brown sugar mixture over the bread. In a separate bowl add the eggs, almond milk and vanilla and whisk till the eggs have brown and all is mixed together. Pour over the top of the bread mixture. Press it all down using the palms of your hands. This will ensure that all the bread is coated with the egg mixture. Place in the refrigerator for at least 2 hours. Finally bake for 30 minutes on 350 degrees.
My family drizzled a bit of pancake syrup on top which gave it the perfect sweetness! There are so many variations you could make as well like adding powdered sugar to the top. Or you could dice up apples to make apple cinnamon french toast casserole. That is what is so great about this recipe is that you can tweak it to your liking!

This sounds like such an easy recipe! I like that you can make it ahead and let it set in the fridge til you’re ready. French Toast is one of our favorite brunch meals!
I tried to make an overnight french toast casserole for Christmas breakfast and it was a FAIL π It used slices of bread though, not cubes, so I will have to give your version a try!

When Bella was younger I made a french toast casserole for a Mops group I was part of and it was a huge hit with the other mommys that they kept asking me to make it and bring it to the meetings.
