No Bake Thin Mints Chocolate Delights

 My family loves Girl Scout Thin Mint Cookies but they are expensive. With 7 of us one box would last in only a matter of seconds. I made a recipe that is similar to these scrumptious cookies and only a fraction of the cost to make!

No Bake Thin Mint Chocolate Delights

Ingredients
  1. 2 cups semi-chocolate chips
  2. 2 tablespoons of vegetable Shortening
  3. Crackers (I used whole wheat salted crackers)
  4. 3/4 teaspoon of pure peppermint extract
Instructions
  1. Melt the semi-chocolate chips and vegetable shortening in a microwave safe bowl for 1 minute.
  2. Next stir (if not fully melted then microwave for another 15 seconds)
  3. Once the chocolate is fully melted add the peppermint extract and mix. Make sure you taste your mixture, if you prefer to have more pepperminty taste then add a bit more extract.
  4. Then dip the crackers in the chocolate. I used a fork which to dip the cracker in and then gently gave the fork a shake getting the access chocolate off the cracker. Then I added to my silicone baking sheet but if you do not have that then you can use parchment paper.
  5. Finally once the all the crackers are dipped in chocolate then refrigerate the crackers so the chocolate firms up.
Notes
  1. I doubled my batch which made a total of 48 mint cookies. If the batch is not doubled it will make approximately 1 1/2 dozen cookies.

The ladies at a mother’s night out I attended seem to agree! I left with an empty container! This is a fun recipe to make with kids too, they will love dipped the crackers in the chocolate! This Christmas I will have my kids make these as gifts for their Classical Conversations and Bible study teachers.

  24. I love Thin Mints so does my family, Mint chocolate is a huge hit around here. I understand all too well how just a box would only last seconds around here too. I would make a ton to fill up our cookie jar. That always almost can never really truly seem full in this house we can never have to many cookies when you have kids and a husband.

  36. Did you use peppermint oil? It has been my experience that the liquid flavorings one can buy at the grocery store are alcohol based and will make the chocolate “seize” (get hard).
