My kids are peanut butter and jelly kids. They would eat it for lunch everyday if I made it for them but I get bored making them the same thing. My 6 year old daughter saw a photo of apple slices with peanut butter and lots of goodies on top so I decided to surprise her and make my own version.

Ingredients
- 1/2 tablespoon chia seeds
- 1 tablespoon sunflower seeds (unsalted)
- 1 tablespoon chocolate chips
- 1 tablespoon flaked coconut
- 1 tablespoon raisins
- 1 large apple, cored and sliced
- Peanut butter
Instructions
- After the apple is cored and sliced spread peanut butter over the tops of the slices. Make the topping mixture by placing the chia seeds, coconut, raisins, sunflower seeds and chocolate chips in a bowl and mix with your hands. Then with a spoon sprinkle over the tops of the apples, the peanut butter will be like a "glue" and hold the toppings on so it's not so messy.

Allergic to peanuts? You can use almond butter or Nutella as a substitute. The great thing about this recipe is that is can be modified to suit kids likes and dislikes! Add another apple slice on top and turn it into an sandwich!

I have three kids who are peanut butter kids. And I have one who is sort of a peanut butter guy, every now and again, lol. Mama? Oh yeah, I like peanut butter (and sometimes jelly). lol These rounds sound great!
My boys are huge peanut butter fans. As a matter of fact, sometimes that is all they want for their school lunches. This is a creative alternative to traditional peanut butter and jelly sandwiches.

This is such a great idea for a snack or even lunch item. I like that it is made with apples instead of bread. I also like that it can be made in several varieties with additions.
Do your kids mind the chia seeds? I know they don’t have a taste, but mine might be nervous because they look different. Found you on the Hope Studios blog party 🙂
Normally I hide the chia seeds in other recipes so they do not know about them but this time they were able to see them, some of my kids minded and some didn’t. Next time I may use less of them and mix them in the peanut butter so they cannot see them.
Now if I can get the children out of the leftover Halloween candy and get them to eat this! Thanks for sharing at Home Sweet Home!
