Chocolate Banana Oat Cookies

My kids love bananas but sometimes they do not eat them fast enough when I buy them and they wind up getting ripe quick. I am not one to just throw them away so I try to incorporate them in a recipe. I took a few different recipes I found on-line and doctored them up a bit forming something new. This recipe has NO FLOUR OR SUGAR! These are great for vegans too because there is NO dairy either!

Ingredients
  1. 2 bananas (ripe)
  2. 1⁄4 cup peanut butter
  3. 1⁄3 cup unsweetened cocoa
  4. 1⁄3 cup honey
  5. 1 teaspoon vanilla
  6. 2 cups oatmeal
Instructions
  1. Mash up the ripe bananas using the back of a fork until completely smash up and there are no lumps. Add in the peanut butter, vanilla, oatmeal, honey, cocoa and mix well. Place a dollop on the cookie sheet and bake at 350F for 10-12 minutes.
Notes
  1. I find the silicone sheets best to bake on (no sprays or oils needed) plus it makes for an easier clean up!

My 6 year old daughter helped me make these. They were so easy to make, she could practically make them by herself minus the baking part.  Looking for more banana recipes?   7. Whenever we have bananas that have gone past their life, I freeze them and bake with them later. This is a great recipe I can save for the next time I bake with my over ripe bananas!

    • I do the same Lisa, when they start to get too ripe I freezer then for later to make banana bread with them.

  9. Another great way to use leftover end of the week bananas! I normally make bread so this will be a nice change up.

  10. These would get eaten up in mere seconds at my house! We always have bananas on hand and sometimes they start to turn and the kids won’t touch them. This is a great way to use up those unsightly, but still good bananas!
