Hardy Breakfast Casserole #Recipe

 

 

Every Christmas morning my parents make the hour drive to our home to open presents with us and eat breakfast. For the past breakfasts I normally make eggs, pancakes and bacon and I spend too much time in the kitchen missing out on the kids opening gifts and spending time with my family. So this year I wanted to keep it simple. I had never made a breakfast casserole before but I decided to give it a whirl. So I went to my favorite resource — Pinterest. I found a recipe I liked but I modified it.

Ingredients
  1. 1 Package Of Crescent Rolls
  2. 1 Package of Bacon
  3. 6 Eggs Beaten
  4. Coconut Oil
  5. 2 Cups Shredded Cheese (I used mozzarella but any can do)
Instructions
  1. First cook your bacon whoever you wish, I use the microwave because it's fast and I can prepare the rest of this dish while it's cooking. Grease a 9 X 13 pan with coconut oil so that the casserole will not stick to the pan. Lay out the crescent rolls flat on the bottom of the pan so it covers the whole bottom of the pan. In a separate bowl crack open your eggs and beat them, when all the bacon is cooked crumble it into the eggs. Next our over the egg mixture over the top of the crescent rolls then sprinkle the cheese over the top and bake on 350 degrees for 30 minutes.

The great thing about this recipe is that it is so versatile, the next time I make it I will jam pack it with veggies. How about fresh spinach, onions, garlic and asparagus? Or you could use different meats like sausage or ham. The possibilities are endless! Stay tuned for the next time I make it because I will change it up a bit. Either way it was very much enjoyed because it went fast with no leftovers!

  42. After we open presents we go to my mother-in-laws for breakfast. She always makes a breakfast casserole. Every year something doesn’t turn out quite right. This year she opted for homemade waffles but kiddo got really sick and we ended up not being able to go over there.
