Easy Apple Pancakes

My kids love pancakes so I try different ways of making them aside from adding blueberries, strawberries or chocolate chips to the batter. We brought so many delicious apples back from our apple picking adventure during our New York trip that I wanted to incorporate them into some recipes so I added them into the pancakes.

Ingredients
  1. 1 Large McIntosh Apple Diced (or any apple of your preference)
  2. 2 1/2 Cups All-Purpose Flour
  3. 1 Tsp. Vanilla
  4. 1 Tsp. Cinnamon
  5. 1/2 Cup Coconut Oil
  6. 3 Tbsp. Baking Powder
  7. 2 Tbsp. Sugar
  8. 2 Eggs
  9. 1 1/2 Almond Milk
  10. 2 Tbsp. Chia Seeds
Instructions
  1. This is a double batch because we have a large family, so if you do not want this many cut the recipe in half. In mixer or large bowl add the flour, egg, vanilla, cinnamon, coconut oil, almond milk, Chia seeds and eggs mix together. Once fully mixed add the diced apples to the mix and mix until fully blended. Then cook like you would regular pancakes.
Notes
  1. Use agave nectar, honey or maple syrup for topping.

  22. This reminds me of my mom’s recipe when we were little. We would never have plan pancakes. She would always make them from scratch and add whatever fruit we had lying around!

  24. I’ve never made homemade apple pancakes but the combination of apples and cinnamon is divine. I have however added apple cinnamon muffin mix to pancake mix to create some very yummy breakfast cakes.

  26. Mine won’t eat pancakes after we made them Belgian waffles. Cleaning that after you add apples/etc. is a nightmare!

  28. Now those are some awesome pancakes! Love the almond milk, and coconut oil used instead of regular milk or common oil. I like the higher quality ingredients. And love the idea of putting apples in my pancakes.

  45. We are always trying creative ways to make our pancake mix. We love apples in them too, may I suggest also adding a few pinches of cardamom? It adds a nice flavor and the kids like it!
