Sweet & Savory Broccoli Salad

I love broccoli salad and ever since I tried it a few years back I wondered how to make it. It has been on my bucket list to make. Thankfully on our recent trip to New York to visit my in-laws I learned how to make it! A picnic was planned for our family and to my surprise when I went to go fix myself a plate there it was broccoli salad! Yeah! I cannot take credit for this recipe, all credit goes to my mother-in-law!

Sweet & Savory Broccoli Salad

Ingredients
  1. 1 package of bacon
  2. 1 head of fresh broccoli
  3. 1/4 cup of red onions chopped
  4. 1/2 cup of raisins
  5. 1/4 cup of sunflower seeds
  6. 1 cup of mayonnaise
  7. 1/2 cup of white sugar
  8. 3 tbsp apple cider vinegar
Instructions
  1. Place bacon in a large skillet or your preferred cooking method and cook till crispy. Drain on paper towel, crumble and set aside.
  2. Chop broccoli florets into bite size pieces. In a medium bowl combine broccoli with red onions, raisins, crumbled bacon and sunflower seeds.
  3. In a small bowl whisk together the mayonnaise, apple cider and sugar. Pour over the broccoli mixture and toss until combined.
  4. Refrigerate for a few hours before serving.

    This is REALLY Good. We tried it tonight (I was looking for a new way to use fresh broccoli that did NOT involve cooking it. (Confession: to avoid having to really cook AT ALL, I cheated and used Oscar Meyer pre-cooked bacon strips that you can just nuke it for a few secs… Not bad, really)

    Anyway, it was incredibly fast and easy to make, tasted delicious and everyone loved it. I don’t even have enough leftover to have it for lunch tomorrow!
