Fresh & Tasty Vegetable Medley Recipe

 

 

 

My husband and I have been doing a low carb diet. For me I am doing more of the Paleo style diet.  It gets hard though because I get bored easily. We are trying to incorporate a lot more vegetables in our diets. I took what I had in the refrigerator and made a vegetable medley, I have never made this before. Just thew it all together as  I went.

Ingredients
  1. 1/2 Zucchini Squash
  2. 1 Large Red Pepper
  3. 1 Cup Broccoli
  4. 1 Large Onion
  5. 2 Cloves of Garlic
  6. 4 Large Carrots
  7. Salt & Pepper
Instructions
  1. Always wash vegetables prior to use. I use a fruit and veggie cleaner I get from Trader Joes. Once everything is clean then dice up the peppers, onion, garlic and carrots. For the broccoli I just cut into smaller chunks.
  2. I use my rice cooker to steam my vegetables. Place all the vegetables in the steamer and allow to fully cook until softened. Once everything is cooked salt and pepper to season.

This recipe can be altered with any vegetables you may already have tin the refrigerator. I used what I had on hand. I used to buy the frozen vegetable mixes in my grocery freezer but I will not anymore. What about you do you make vegetable recipes from fresh or frozen? Frozen is convenient because most times the vegetables are already cut up for you but the taste of fresh tastes so much better!  

 

You can serve it so many ways. I actually ate mine over a salad.  Other ways could be to add it to pasta or even make taco’s!  How do you like your vegetables?

  30. I roast a big batch of veggies a few times a week- I use them to top pasta and chicken and make a really simple sauce for them. SO easy and SO good!

    My mom always does a lot of her veggies like this and they turn out great. She will put in mild peppers and all kinds of things and occasionally a jalapeno to spice it up a bit. Yours looks great
